Moroccan inspired chicken with lemon and olives


  • 1 chicken, cut into pieces
  • 2 onions, chopped
  • 3 cloves garlic, crushed
  • 1 bunch fresh coriander, chopped
  • 1 bunch fresh parsley, chopped
  • juice of 1 lemon
  • ½ tsp ground cinnamon
  • ½  tsp ground ginger
  • 1 tsp paprika
  • 200g green olives, destoned
  • salt and pepper to taste
  • 3 Tbls olive oil



  1. In a large saucepan, sauté the onion in olive oil for about 5 minutes. Add the chicken pieces and brown.
  2. After 10 minutes add the garlic, half the coriander, half the parsley, salt and pepper. Stir and let the flavours combine. Add the lemon juice, cinnamon, paprika and olives.
  3. Cover and cook over a low heat for 30 minutes, adding a little hot water if necessary.
  4. Sprinkle the rest of the coriander and parsley over the chicken and serve with preserved lemon and couscous.
